摘要

PURPOSE:To obtain the title sauce with improved preservability without impairing the taste and flavor unique to fonds de veau by incorporating fonds de veau with a specific vinegar. CONSTITUTION:The objective sauce can be obtained by incorporating (A) fonds de veau (a broth from bovine) with (B) 10-30wt.% of a specific vinegar (made from grapes of northern Italy growth).
