<p>PURPOSE:To produce the subject powdery rice-wine lees having a suitably reduced flavor, capable of blending another raw material without damage thereto and excellent in storage stability by drying and pulverizing rice-wine lees after ethanol treatment or without further treatment. CONSTITUTION:Rice-wine lees prepared by filtration or press of unrefined soy of a rice-wine are dried and then pulverized or a solid matter separated by the centrifugal separation method, etc., from a suspension prepared by adding an aqueous ethanol solution of about >=90vol.% concentration to the rice-wine lees preferably in an amount of about 3l based on 1kg rice-wine lees and then sufficiently suspending the resultant mixture is dried and pulverized.</p> |
