PURPOSE:To obtain a yeast product, having good flavor with eliminated odor, taste, etc., peculiar to yeast and suitable as a food material, etc., by culturing yeast fungal cells in a culture medium containing soy sauce and glucose, filtering the resultant culture through a flat membrane and collecting the fungal cells. CONSTITUTION:Yeast fungal cells are cultured in a culture medium containing soy sauce and glucose. Yeasts (e.g. Saccharomyces.cerevisiae) used for producing beer, refined SAKE (Japanese rice wine), wine, MISO (fermented bean paste), soy sauce, bread, etc., are suitable as the yeast fungal cells. The culture is preferably continuously carried cut by using a membrane type bioreactor 10. The resultant culture is circulated through a membrane module 16 (e.g. precise filtration membrane) with a pump 18 to collect the yeast fungal cells in the culture solution. The filtration membrane 16 with the yeast fungal cells is then dried and the yeast fungal cells are subsequently peeled to afford a yeast product suitable as nutrient supplementary tablets, food additives, etc. |
