Microcapsules based on gelatin and anionic polysaccharide of low molecular mass which may contain solid or liquid substances, prepared by coacervation. <??>The aqueous solutions of the polysaccharides which may be employed have a low viscosity whose value is a function of the nature of the polysaccharide; in the case of a concentration of 15 g/l it is generally between 1 and 20 mPa s at 75 DEG C. <??>These polysaccharides are products of depolymerisation of natural products: alginates, carrageenans, pectins and pectates, carboxymethyl celluloses, carboxymethyl guars and carboxymethyl starches. <??>The microcapsules may be isolated and dried.
