<p>The invention relates to a process for the treatment of a non-liquid food product in order to effect microbial decontamination thereof. This process, which is applicable to the hydrated product containing at least 20 % of water, consists in depositing a preparation termed LP system, comprising a mixture of lactoperoxidase enzyme, thiocyanate and an oxygen donor, on the surface of the aforementioned hydrated product. This deposition can be performed, in particular, by spraying or immersion in a bath. The treatment according to the invention preserves the product from most of the pathogenic or saprophytic microorganisms capable of growing on these products, in particular bacteria of the genus Listeria, this being achieved in the absence of denaturation of the product and without any risk to the consumer.</p> |
