PURPOSE:To obtain the subject composition, containing a thermally coagulable protein and alkaline earth metal agent and having an optional shape using an edible part of a cuttlefish. CONSTITUTION:The objective composition containing a thermally coagulable protein (preferably an aqueous dispersion thereof is capable of jellifying at <=80 deg.C heating temperature) and an alkaline earth metal agent (preferably calcined powder of eggshell, shell or bone meal, calcium oxide or calcium hydroxide). |
