PURPOSE:To obtain the title fat and oil comprising uniformly dispersed solid content, having excellent plasticity and spreadability by blending a fat and oil substance which is quenched, solidified and pulverized with a specific powdered solid component and kneading the blend under reduced pressure. CONSTITUTION:A fat and oil substance (e.g. margarine) comprising palm oil, etc., as an oil layer-forming substance and water, whole fat milk, etc., as a water layer-forming substance, for example, is quenched, solidified and pulverized by using an open type cooler (preferably cleaning drum). The pulverized fat and oil substance is blended with a solid component prepared by powdering a substance (e.g. diary product such as cheese) insoluble or slightly soluble in the fat and oil substance into <=20mm particle diameter by a cutter and kneaded at <760mmHg (preferably <500mmHg) pressure at 1-25 deg.C to give the aimed fat and oil. |
