PURPOSE:To directly produce a fatty acid calcium salt in minimum heating treatment from oil and fat raw material by blending liquid oil and fat with slaked lime, lipase and water while stirring to react the fatty acid calcium salt with the liquid oil and fat. CONSTITUTION:Reaction is carried out by adding slaked lime, lipase and water to a liquid oil and fat and stirring the mixture to provide the aimed fatty acid calcium salt. At least 0.07pts.wt. slaked lime and 0.01pts.wt. water based on 1pts.wt. oil and fat and at least 100 unit lipase based on 100g oils and fats are blended. As the oils and fats, oils and fats having especially high unsaturated fatty acid content are effectively used as a raw material. The lipase is enzyme- chemically classified as triacylglycerolester-hydrorase and a lipase derived from a plant, fungi, bacterium, etc., can be also used in addition to a lipase derived from an animal. |
