New process for extracting colouring substances from fruit berries. Process for extracting anthocyanosides freed from anthocyanidines, from fruits by successive use of an alkanol poorly miscible with water, evaporation of the solvent in vacuum, followed by taking up the residue with a weakly polar supercritical solvent which is distilled at moderate temperature. The anthocyanocides thus obtained, and especially those from blueberries, are active ingredients in medication. |
