PURPOSE:To provide a pasty food having fresh feeling and excellent texture in producing a pasty food by treating semiprocessed goods or products under high pressure. CONSTITUTION:Fish meat, animal meat, etc., is blended with seasoning, subsidiary raw materials, etc., ground, salt-soluble protein is eluted, the resulting substance is made into a wholly uniform sol state, molded into a given shape, heated and gelatinized to give a paste food such as boiled fish paste, sausage, etc. In the operation, semiprocessed goods or products are treated under high pressure to give a paste product having excellent texture. Pressure in the high- pressure treatment is usually about 1,000-10,000kg/cm<2> properly and pressurizing time is about 5-30 minutes. Consequently, since pressurizing treatment is carried out instead of heating treatment in the conventional process, products having elasticity and excellent hardness to masticate can be produced. |
