The cheesemaker's tun according to the invention contains, in the interior of an enclosed casing - at least one device (12) for feeding milk into the curdling tun; - at least one device (13) for adding rennet or another milk curdling agent to the tun; - on the floor of the tun, a controlled device (6) for removing the liquid by the force of gravity; - above the curdling tun, essentially along the axis of the cylinder, a shaft (7) which is driven by a drive device outside the casing; - tools (9) for cutting the sour milk in a transverse direction which are supported by the drive shaft and are arranged in the same plane, and tools (10) for agitating the sour milk which are also supported by the drive shaft and are arranged at a plane which is offset at an angle to the aforementioned plane, the cutting and agitating tools being offset at such an angle that they can be used separately in the sour milk in the different phases; - a tool (11) which is arranged in the tun for cutting the sour milk in a longitudinal direction, which tool (11) can be displaced from one end of the tun to the other in a longitudinal direction; - a device for guiding the transverse cutting tool (11); - and, above the milk-curdling tun, devices (14) for distributing water and/or cleaning agents which are connected to a delivery device for this purpose. <IMAGE>
