PURPOSE: To obtain a gelatin product which can be completely dispersed and dissolved in cold water by using water, gelatin and hydrolysate of cornstarch having a specified glucose equiv. CONSTITUTION: A soln. containing water, gelatin, a sugar substantially comprising a hydrolysate of cornstarch and having 20 to 36 glucose equiv., acid and an effective amt. of surfactant to increase the dispersibility of the final product is dried to obtain a gelatin product which can be dissolved in cold water. The gelatin product is mixed with a buffer agent, antifoaming agent, flavor and coloring agent to obtain a gelatin dessert mix. |
