PURPOSE:To obtain odorless sardine meat having excellent nutritive value free from fish-like smell of sardine by immersing sardine meat from which the outer layer of the skin is removed and which is washed with cold water in a mixed oozed solution of fragrant vegetable and green tea, packaging and preserving in cold storage. CONSTITUTION:Meat of sardine from which the outer layer of the skin is removed and which is washed with water is prepared. Separately, a fragrant vegetable such as leaves of carrot, leaves of Japanese radish, Chrysanthemum coronarium, parsley, etc., is blended with green tea such as green tea of middle grad, refined green tea, powdered tea or coarse tea in the ratio of 100:4-8, incorporated with water, maintained at 55-63 deg.C for 20-40 minutes and warmly oozed and the oozed solution is immediately cooled to <=10 deg.C rapidly. Then the sardine meat is immersed in the oozed solution at a constant temperature for a constant time, packaged and preserved in cold storage to give odorless meat of sardine. The temperature of a solution to ooze is 5-2 deg.C, immersion time of the meat is 20-100 minutes and temperature of the preservation is cold storage is preferably <=5 deg.C. |
