Polysaccharides which are derivatives of cellulose or starch are disclosed comprising recurring anhydroglucose units of the average general formula (I):

wherein the groups R<1> are identical or different and each is a methyl,

group, in which n is 2 or 3, m is 0 to 10 and p is 0 to 10, and R<2> is hydrogen or a betaine group of formula (II):

in which R<3> and R<4> are identical or different each is a straight chain or branched C1-C4 alkyl group and R<5> is a straight chain or branched divalent aliphatic C1-C10 hydrocarbon group, with the proviso that at least 0.5% of the radicals R<1> in the polysaccharide molecule comprise a betaine group.
