PURPOSE:To obtain the above mushroom preservable over a long period without losing its original taste and flavor, by drying the fruit body of an edible mushroom in air or in an inert gas atmosphere in a state free from the flow of the gas. CONSTITUTION:Fruit body of an edible mushroom such as Armillaria matsutake, Cortinellus shiitake, champignon, etc., is cut as necessary and dried in air or in an inert gas atmosphere at -1-+25 deg.C (preferably 0.1-19 deg.C) and a humidity of 0-30% (preferably 10-15%) for 4-7 days in a state free from the flow of the air or the inert gas to obtain the objective dried mushroom. |
