发明名称 PREPARATION OF LACTOBACILLUS CULTURE HAVING STRONG AROMA
摘要 PURPOSE:To obtain a lactobacillus culture having strong aroma and containing diacetyl as a natural aromatic component at a high concentration in stabilized state, by using two kinds of lactobacilli in combination and producing the culture under specific condition. CONSTITUTION:Animal milk enriched with citric acid or citric acid salt is added with ascorbic acid or sodium ascorbate. Two kinds of lactobacilli belonging to Streptococcus cremoris and Streptococcus diacetilactis are inoculated and cultured in the above mixture. Preferably, the amount of the citric acid or citric acid salt added to the milk is >=0.3wt.% and that of ascorbic acid or sodium ascorbate is about 0.05wt.%. The productivity of diacetyl can be further improved either by adding citric acid or a citric acid salt to the culture liquid obtained by the above culture and shaking the mixture or by adding citric acid or a citric acid salt and lactic acid to the culture liquid and shaking the mixture.
