PURPOSE:To obtain a marbling meat preservable in a refrigerator after thawing and liquid containing a fat which is solid at normal temperature into a raw meat and cooling the meat. CONSTITUTION:100pts.wt. of raw meat prepared by thawing a frozen raw meat or by washing just slaughtered meat with water to eliminate sundry germs is, as necessary, subjected to electric shock treatment at 3,000-4,000V for 1-2min and injected, using an injector furnished with an injection needle, with a suspension liquid composed of e.g. 100pts.wt. of beef tallow and 50-120pts.wt. of vegetable oil and fat and prepared by stirring 3-30pts.wt. of a fat which is solid at normal temperature together with a gelling agent or an inorganic electrolyte with a high-speed agitation mixer, etc., in water of a temperature higher than the melting point of the fat. The obtained meat is frozen and stored. |
