Preparation of a peptide mixture rich in di- and tripeptides, from an enzyme hydrolysate of proteins; the process comprises: - chromatography of this hydrolysate on a column of a cation exchange resin in acidic form, - washing the column of exchange resin with water, - elution of the said column of exchange resin with an aqueous solution of an alkali, - and the recovery of the eluate fraction enriched in di- and tripeptides, in particular that which leaves the column of exchange resin from the time when the refractive index of this eluate has reached the value 5 until the time when the pH of this eluate has reached the value 8.
