PURPOSE:To obtain the titled novel food sufficiently keeping the natural taste of onion, preservable over a long period and convenient for use owing to its small cube or powdery shape, by heating minced onion with an oven according to a specific process. CONSTITUTION:Onion is cut into small pieces of 3-6mm cube, spread on a cooking plate of an oven and heated until the surface of the onion is turned via pink color into brown color, when the onion is taken out of the oven, stirred or displaced on the cooking plate and heated again in the oven at 100-110 deg.C. The above operations are repeated several times to obtain the objective food. The onion can be uniformly heated while preventing the adhesion of onion to the cooking plate and can be sufficiently dried at a low temperature by this process. |
