Process for the production of sour dough

Process for the production of sour dough in which the starter material, flour and water at a defined temperature which favours the development of lactic acid bacteria, is introduced into a vessel and the temperature is decreased in dependence on the electrical conductivity of the material introduced in such a way that the development of acetic acid bacteria is promoted.
