PURPOSE:To improve both brittleness and texture of a candy, by using meso.erythritol, saccharide and sugaralcohol as a main agent. CONSTITUTION:In a hard candy containing meso.erythritol as a main agent, a saccharide, such as sucrose or glucose, and sorbitol, maltitol, etc., as a sugaralcohol other than the meso erythritol are added to the meso.erythritol. In the process, 30-80wt.% meso.erythritol is contained in the resultant blend, which is then melted and cooled to produce a candy. Thereby, since formation of fine crystals is excellent, the candy is hardly disintegrated in spite of good texture. |
