PURPOSE:To obtain the titled confectionery, containing a creamy substance in a jelly- like substance and having excellent texture, by using a high-melting gelling agent to prepare a jelly-like substance, heating the substance to form a liquid substance, filling the liquid substance in container and subjecting the filled liquid substance to specific treatment. CONSTITUTION:A gelling agent having the melting point above the temperature in sealing and heating is used to prepare a jelly-like substance, which is then mixed, stirred and heat-treated to provide, a liquid substance at a given temperature. The obtained liquid substance is then filled in a container. A pasty substance prepared by heating and blending amylopectin and water with a jamlike or creamy substance is added to the jelly-like substance before solidification thereof and homogeneously diluted by heating. The resultant blend is subsequently solidified by heating. The resultant blend is subsequently solidified by freezing and forming and contained in the jelly-like substance in the above-mentioned container to instantaneously and quickly freeze the jelly-like substance around the frozen creamy substance. The container is then thermally sealed. Thereby the aimed food capable of holding the creamy substance which is the contained substance in a state without changing the shape and quality thereof even in subjecting to respective treatments of washing and thermal sterilizing. |
