PURPOSE:To make the fluidity of emulsified fat and oil good and to improve workability by preparing emulsified fat and oil consisting of 50-80pts.wt. fat and oil, 15-49pts.wt. water, 1-5pts.wt. cyclodextrin and saccharide as a main component. CONSTITUTION:Emulsified fat and oil is produced by mixing 50-80pts.wt. fat and oil, 15-49pts.wt. water, 1-5pts.wt. cyclodextrin and saccharide and thereafter emulsifying the mixture. The concn. of saccharide is properly regulated to the rate not less than 60g saccharide for 100g water. Further after mixing fat and oil, water and cyclodextrin of the above-mentioned prescribed amount and producing the kneaded material, a method for mixing saccharide therewith is more preferable. As fat and oil to be used, substance contg. 4-8C lower fatty acid having <=40 deg.C m.p. in large quantities is preferable. Furthermore as saccharide, refined saccharose, fine granulated sugar, grape sugar and powdery starch syrup, etc., can be used. |
