PURPOSE:To transform natural cheese into process cheese without damaging calcium, lipid, etc. of natural cheese, by blending natural cheese with the essentials of konnyaku (Japanese devil's tongue). CONSTITUTION:Natural cheese and essentials of konnyaku (preferably in the form of hydrates such as those in the underground stem or the flour of konnyaku or derivatives of these hydrates) are kneaded together by a high-speed cutter etc. to produce process cheese. The cheese thus prepared can be blended with other foods to give a safe food with slower denaturation due to freezing having new taste and flavor. |
