PURPOSE:To prepare OKOWA (glutinous rice steamed with red beans) packed in crumbled state keeping the original shape of glutinous rice grain, by steaming raw glutinous rice absorbed with a specific amount of water, subjecting the rice to water-absorption, cooling, etc., with shower and drying only the surface layer of the rice for a specific time. CONSTITUTION:Glutinous rice containing a specific amount of absorbed water is steamed as it is, subjected to water-absorption and cooling with shower and dried with cold air for a specific time to dry only the surface layer of the rice. For example, 1kg of glutinous rice is polished, washed, immersed in water of 15-20 deg.C for about 1hr, steamed for 5-20min, cooled for 20-40sec with water of about 20 deg.C, stored at a water-content of 51-55% to effect gelatinization of the rice, drained, cooled and dried. A cooked OKOWA packed in crumbled state and resistant to form a plate agglomerate can be prepared by this process while keeping the original shape of the glutinous rice grain. |
