PURPOSE:To dry fish eggs at a low cost without impairing flavor, color and taste thereof, by keeping the interior of a drying chamber at a specific temperature and flowing air under a given vacuum degree. CONSTITUTION:The interior of a drying chamber 1 for drying fish eggs is kept under a given vacuum degree (preferably 50-2,000mmAq) while keeping the interior thereof at a specific temperature (<=45 deg.C) with a heat exchanger 8 or air conditioning apparatus 9 by gas discharge by a ventilating fan 3 and inflow from a suction port 6. Fish eggs are then put in the interior and the vacuum degree is preferably set at 0-500mmAq after a given time. |
