<p>Prodn. of bioadhesive polyphenolic proteins (I) contg. 3,4-dihydroxyphenylalanine (L-dopa) residues from protein precursors contg. tyrosine residues comprises (a) prepg. a tyrosine-contg. protein and (b) reacting the protein with a tyrosinase enzyme at a pH of 4.5-8 and a temp. of 20-37 deg.C and at an enzyme to protein ratio of 5-50 units of enzyme per microgram of protein to form (I). Pref. the tyrosinase enzyme is mushroom tyrosinase. Reaction is pref. carried out in the presence of ascorbic acid to retard conversion of the 3,4-dihydroxyphenylalanine residues to quinones. Reaction may be terminated by decreasing the pH to below 4 to recover (I).</p> |
