PURPOSE:To enable stable and economical storage of a meat food over a long period without degrading the quality of the meat, by sealing a meat food with a gas-barrier packaging material, substituting the atmosphere in the package with an inert gas to attain an oxygen-free state and maintaining the packed food at ice temperature. CONSTITUTION:A meat food is sealed with a gas-barrier packaging material, the atmosphere in the package is substituted with an inert gas to attain an oxygen-free state and the content is maintained at ice temperature. Any packaging material can be used for the purpose provided that the material has sufficiently high gas-barrierness especially in an ice temperature range. The order of the gas-barrierness is usually oxygen gas permeability of <=50cc/m<2>.24hr, preferably <=20cc/m<2>.24hr at 23 deg.C and 65% RH. The storage temperature depends upon the kind of the meat, the presence or absence of a freezing point depressor, the storing period, etc., and is usually selected between -0.2 deg.C--10 deg.C.
