PRODUCTION OF NOVEL KONJAK

PURPOSE:To obtain novel KONJAK (paste made from the starch of devil's- tongue) suitable as a health food without deteriorating the taste and flavor of KONJAK, by adding specific amounts of extract of KUMAZASA (Sasa albo-marginata) and mugwort powder to raw material of KONJAK. CONSTITUTION:Dried powder of tuberous root of devil's tongue is dissolved in about 30-40 times water. 100pts.wt. of the obtained aqueous solution of KONJAK mannan is mixed with (A) 1.5-10pts.wt. of alcohol extract of KUMAZASA and (B) 1.5-12pts.wt. of mugwort powder produced by pulverizing dried mugwort leaf to 80-180 mesh. The resultant homogeneous liquid is left at rest for about 1-4hr and coagulated with lime.
