PURPOSE:To produce green tea in a state fitted to the condition of the tea at the time, by changing set values of controllable factors greatly affecting the degree of drying considering the quality of the green tea leaves without changing the process time (T) in a process of each green tea production machine accompanied by drying. CONSTITUTION:Green tea leaves are passed through a leaf feeder 1, steamer 2, color 3 and weighing hopper 35 and then fed to a coarse rolling machine 6, medium rolling machines 7 and 8, fine rolling machines 9 and 10 and dryer 11 one after another and transferred to a weight detecting means 118. The central control device (L) instructs quality (G) of the green tea leaves, process time (T) and set values (A) of controllable factors determined according to the quality of the green tea leaves to respective small control devices 44, 54, 74, 84, 92, 102 and 115 of respective green tea production machines 4, 5, 7, 8, 9 and 10. The instruction of the set values (A) is made each time the set values (A) are corrected according to the deviation (DELTADS) of the actual average drying rate (DS) from the set values.
