PURPOSE:To produce mellow frothy SAKE which foams finely without damaging characteristic taste of SAKE, by putting SAKE in a closed tank, adding sugar and yeast to the SAKE, fermenting and rapidly cooling the SAME to a temperature below zero when pressure in the tank reaches a predetermined pressure. CONSTITUTION:A tank 1 which can be cooled, heated and completely closed is charged with a given amount of SAKE, sugar and yeast, heated to about 16-22 deg.C, sufficiently stirred until sugar is dissolved and the tank is hermetically sealed. When pressure in the tank 1 reaches predetermined pressure (e.g., 2-5kg/cm<2>) by fermentation with the yeast, the tank 1 is rapidly cooled to -1--3 deg.C. Consequently, SAKE having finished brewing can be made into mellow frothy SAKE having fine foaming and low irritation without damaging characteristic taste of SAKE.
