PURPOSE:To obtain a liquid food having excellent taste and flavor, keeping the excellent smell of the raw material almost unchanged, by attaching a cooling jacket to a vacuum-evaporation tank of the direct-heating sterilizer, cooling the tank with water and sterilizing the raw material under controlled degree of vaccum. CONSTITUTION:The vacuum evaporation tank 10 has a double-walled structure composed of the tank part and the cooling jacket part, and is cooled by passing cooling water through the jacket. The content of the tank is sterilized at a vacuum degree of <=40 cmHg, preferably <=20 cmHg. A sterilized liquid product (e.g. coffee, tea, etc., having delicate flavor) can be produced keeping the excellent taste and flavor of the raw material and causing little loss of the excellent smell of the raw material. |
