PURPOSE:To obtain pyranose oxidase in high yield in a culture, by cultivating a specific microorganism in a nutrient culture medium, and collecting the produced and accumulated pyranose oxidase in the culture. CONSTITUTION:A microorganism, belonging to the genus Irpex, Auricularia, Coprinus or Tramets, and having the ability to produce pyranose oxidase is cultivated in a nutrient culture medium to produce and accumulate the pyranose oxidase in the culture. The produced and accumulated pyranose oxidase is then collected. The nutrient culture medium to be used may be either one of synthetic and natural culture media if a carbon source, nitrogen source, inorganic material or other minor nutriments required by the strain used are moderately contained therein. The cultivation is usually carried out by the spinner culture method with aeration. Preferably, the cultivation temperature is within 20-35 deg.C range, and the pH of the culture medium is within 3.0-8.0 range. The cultivation is completed in a period of 3-7 days.
