PURPOSE:To obtain dehydrated potato reconstitutable easily and having excellent palatability, by blanching raw potato cut properly in the form of dies, chips, etc., leaving the potato to cool, freezing slowly, and drying the potato. CONSTITUTION:Raw potato (e.g. whilte potato, sweet potato, etc.) is washed, skinned, cut properly in the form of dies, chips, etc. exposed to water, blanched in boiling water, etc. to attain a proper hardness, and left to cool. The potato chips are frozen slowly to destroy the cells and tissues of the potato and dried (e.g. by drying under air flow) to obtain the objective dehydrated potato. EFFECT:It has exellent long-term preservability and reconstitutability, etc. |
