The invention relates to a process and an arrangement for sampling and volume measurement of milk from or in a transport line leading via an air separator to a collecting vessel, the volume of the milk leaving the air separator being measured. By means of the invention, alternative solutions with regard to the transfer of the amount of milk to be tested are possible using reduced pressure or overpressure by a slight modification of the arrangement. Furthermore, in comparison with known arrangements, the contamination of the system with air is reduced, critical surfaces are more intensively and more completely cleaned and rinsed, the amount of sample is more optimally measured, the air separation and thus the volume measurement is improved. These advantages are achieved, inter alia, in that the transfer into the air separator of the amount of milk to be tested is carried out using reduced pressure or alternatively using overpressure, that the further conveying of the milk quantity from the air separator to the collecting vessel is essentially carried out using overpressure and that the amount of milk collected and mixed in the pre-sample vessel is used with the aid of overpressure for the complete cleaning of the surface wetted by the sample quantity from the preceding supplier from this milk and is subdivided into a sample amount and a residual amount. <IMAGE>
