PURPOSE:To obtain the titled processed food meltable well in the mouth, having good body, easily producible even by combining milk raw materials in a various way, comprising a specific amount of an organic acid monoglyceride and a specified ratio of a specific glycerin monofatty acid ester. CONSTITUTION:The aimed processed food comprising (A) 0.01-0.5wt% organic acid monoglyceride and/or (B) 0.01-0.5wt% glycerin monofatty acid ester having >=30wt% >=20C fatty acid content, preferably obtained by homogenizing an oil-in-water type cream composition except a chocolate component, blending and emulsifying the chocolate component into the homogenized composition, and the emulsion is then sterilized or disinfected, and cooled to give the aimed processed food. A content of casein is preferably controlled to >=0.1wt%. |
