PURPOSE:To make it possible to obtain a crispy frying coating, by incorporating a batter mix composition for TEMPURA with pulverized grains having a specific particle size. CONSTITUTION:A batter mix composition for TEMPURA containing 0-40wt% pulverized grains having >=60 mesh particle size passing through 32 mesh and 10-80wt% pulverized grains having >=80 mesh particle size passing through 60 mesh without containing pulverized grains having >=32 mesh particle size therein. Coarse grains of corn, wheat or rice, etc. may be cited as the pulverized grains. If pulverized grains having >=32 mesh particle size are incorporated, the sense of eating of the coating becomes sandy, and the appearance is deteriorated. If the content of the pulverized grains having >=60 mesh particle size passing through 32 mesh exceeds 40wt%, the sense of eating of the coating becomes sandy, and the appearance is deteriorated. |
