The peeling knife for fruit and vegetables, has a handle (1), with knife blade on a parallel axis and which pivots in relation to the handle. Parallel to the blade and a little distance form it is a roller support (8). The peeling knife has its blade (K) in one piece, in which is an oblong cut-out section (37) open on several sides, in which is mounted the pivot mounting (9) and roller support (8). The blade is situated outside the cut-out section (37). The top surface of the peeling knife is curved. In one piece with the handle (1) and the middle part (30) containing the cut-out section (37) is a point (31), which has a helical surface (41).
