PURPOSE:A ground product of stems of WAKAME (a sea weed) is made into a gel, then dried to enable the production of low-calorie food by using stem of WAKAME which have been discarded. CONSTITUTION:Desalted WAKAME stems are ground, mixed, when desired, with other foods such as chlorella, further combined with at least one sodium salt selected from aliphatic carboxylic acid sodium salts, sodium bicarbonate and sodium phosphate. Then, the mixture is adjusted in pH to 8.5-8.8. The resultant syrup is brought into contact with an aqueous solution of a divalent metal salt such as calcium chloride or magnesium chloride to effect gelling and forming simultaneously. Then, the formed gel product is frozen and dried. |
