Process for water treatment using ozone, characterised in that, at a precise moment which is that when the oxidising action of the ozone on the organic matter present in the water to be treated has reached its maximum and when only difficultly oxidisable matter still remains in the water, a peroxide solution is added to the ozonated water before continuing the treatment using ozone. The precise moment in the ozone treatment at which the peroxide solution is added is determined by measuring a parameter whose optimum value is chosen as a function of the final quality of the treated water, the quantity of peroxide added being itself defined by starting with this value and varying as a function of the flow rate of water to be treated. The parameter employed may be the optical density measured in ultraviolet light, the peroxide employed being hydrogen peroxide. <IMAGE>
