The apparatus comprises a measuring probe (1) which can be exposed to the product to be measured. It has four electrodes (11-14) which form measuring and contact surfaces and are designed for insertion into the heapable product. The electrodes are situated at the free end of a rod-like housing (2) which encloses the electronic circuit of the capacitive hygrometer and supports a handle (3) and an indicating instrument (4). This makes it possible to carry out a random-sample measurement of the state of the product under test at any point by inserting the measuring probe (1) into it, for any type of product in a very simple manner, with an immediate indication of the result. <IMAGE>
