PURPOSE:To provide processed vegetables capable of imparting thick taste free of irritant unagreeable taste when added to a dressing, etc., by heating vegetables in a food oil, and grinding the product. CONSTITUTION:Preferably >=2 kinds of vegetables such as green vegetables, stalk vegetables, etc. cut to fine strips are added to a food oil (preferably refined salad oil, etc.), and heated preferably at 100-120 deg.C for 80-100min. If necessary after removing the supernatant liquid by decantation, and the vegetables are ground with a mixer, etc. to obtain the objective processed vegetables. The amount of the vegetable is preferably 0.3-90pts.wt. per 100pts. of the whole product including food oil. |
