摘要 <p>PURPOSE:To produce a fruit preserved in a syrup for a short period, by forming a part for permeating a concentrated syrup on the surface of the fruit, and boiling and aging the concentrated syrup directly or after dipping the fruit in the concentrated syrup. CONSTITUTION:A part 18 for permeating a concentrated syrup is formed on the surface of a fruit 10 which is a fruit of the genus Malus such as BENI, HIME or OTOME apple having a thick skin or a thinned fruit 10 for thinning, and the above-mentioned fruit 10 is then dipped in the concentrated syrup in about 40% saccharide concentration, boiled and aged. Alternatively, the fruit 10 is directly boiled and aged before dipping. Thus, the part 18 for permeating the concentrated syrup is many small holes perforated at the basin part of the fruit 10 or ring cut off part formed by slicing thinly the basin part of the fruit 10. As a result, the permeation of the syrup is completed within 3-5 days, and the fruit 10 dipped in the syrup can be bottled boiled, aged, sterilized and shipped as a fruit comport. Thus, the aimed product of high added value can be easily produced in a short time.</p>
