<p>Method and plant for producing naturally salted raw meat intended to replace the dry salting of raw meat pieces. The dry salting method which has been utilized heretofore is time consuming and frequently results in an irregular salt distribution, an over-salting and an important waste of time. The present invention remedies to this problems by simultaneously treating numerous meat pieces piled on top of each other into a pressure container and these pieces are only slightly salted and are subjected, by the pulsating pressure of a cover having a mechanical perpendicular displacement as a function of certain time intervals, to different pressure conditions, letting out after a short interval from the whole of the meat pieces a lacquer which dehydrates the meat and reduces after some time its initially high salt content by transmitting the salt to the meat.</p> |
