PURPOSE:To produce glutathione in high yield, by properly setting the feeding method of sugar in the cultivation of a glutathione-producing yeast to control the rate of ethanol production in the cultivation process to the optimum state, and adding a specific amount of ethanol to the system. CONSTITUTION:A glutathione-producing yeast strain (Saccharomyces cerevisiae TRZ-6, FERM-P No.6214) is cultured in a medium containing the growth acceleration components composed of a carbon source such as glucose, a nitrogen source such as ammonium sulfate, phosphoric acid, iron salt, an inorganic salt such as Mn salt, and an organic nitrogen source such as yeast extract, at 20- 40 deg.C and 3-8pH. The ethanol concentration in the medium is controlled to 0.05-6% by controlling the rate of addition of sugars to the medium. During or after the addition of the sugars, the medium is supplied with additional 0.05-3% ethanol. The content of glutathione in the microbial cell can be increased remarkably by this process. The glutathione can be separated from the yeast cell by conventional method. |
