PURPOSE:To provide a fish paste product for salad, resistant to hardening even if in contact with an acidulant, by adding a lactone to a fish paste product. CONSTITUTION:A lactone (e.g. glucono-delta-lactone) is added to a fish paste product in an amount of preferably 0.1-0.4%. If necessary, the product is further incorporated with calcium chloride. A salad can be prepared by compounding the paste product with other salad components and an acidulant. |
