PURPOSE:To obtain tasty boiled rice independently of small difference in water content, heating conditions, etc., by adding specific amounts of wine and ethyl alcohol besides water to rice, boiling it for a proper time. CONSTITUTION:A common amount of water is added to 135g rice, 8-12cc mixed composition solution of 30-50pts.wt. wine and 70-50pts.wt. ethyl alcohol is further added to the rice, the rice is allowed to stand for while, and boiled. Since water in which the rice is immersed contains ethyl alcohol and the alcohol in the wine, water can be penetrated into the rice, so the rice has a proper degree of water absorption and degree of swelling. Consequently, swollen boiled rice having good hardness to masticate can be prepared independently of small difference in water content and heating conditions. |
