The present invention relates to a method for preparing ginseng catfish soup which uses meat broth brewed by using native grasses such as Korean Epimedium or Allium thunbergii, which has earthy and light flavors and is utilized for strengthening weak constitution, performing an anti-bacterial function, preventing stroke from occurring, and improving digestion, thereby having unique taste, removing smell, and promoting digestion. According to an embodiment of the present invention, the method for preparing ginseng catfish soup comprises the following steps: (a) preparing meat broth by soaking native grasses including kalopanax, acanthopanacis cortex, Korean Epimedium, or Allium thunbergii in water and decocting the same for 24 hours or longer; (b) trimming catfishes, and chiller aging the same; and (c) placing the meat broth brewed in step (a), the catfishes prepared in step (b), various vegetables including ginseng, garlic, dates, chestnuts, Chinese matrimony vines, leeks, sesame, Chungyang red pepper (red pepper), Angelica gigas Nakai, and milk vetch root, herbal medicine compositions, and native grasses in a pot, and boiling the same for 30 minutes or longer. |
