PURPOSE:To provide the titled agent containing proline or its salt as an active component, and capable of preventing cancer caused by N-nitroso compounds by preferentially detoxicating the carcinogenic N-nitroso compound in the stomach. CONSTITUTION:An agent for preventing the cancer caused by N-nitroso compounds, e.g. hepatic cancer, gastric cancer, etc., is prepared by using proline or its salt as an active component. Proline is preferably natural L-proline, DL- proline, their Na salt, K salt, etc. When proline is brought into contact with an aliphatic amine in the stomach, it reacts preferentially with nitrite ion to form non-toxic N-nitrosoproline and effectively inhibits the formation of a carcinogenic N-nitroso compound in the body. The agent can be prepared in a form to be taken spontaneously, preferably as an additive of foods (e.g. soy, sauce, mayonnaise, etc.).
