<p>PURPOSE:To produce a brewed liquor having high acidity, preventing the contamination ith sundry germs, utilizing the raw material efficiently, by using a culture liquid obtained by the cultivation of a microbial strain belonging to Rhizopus genus in a liquid medium made from cereals. CONSTITUTION:A microbial strain belonging to Rhizopus genus is inoculated in a liquid medium made from cereals such as polished rice, and cultured under shaking or aeration. The culture liquid is added to unrefined liquor to obtain the objective brewed liquor.</p> |
